Domaine Jean-Louis Chave is often described as the “Pope of Hermitage.” From the small town of Mauves, located just south of the Hermitage AOC in the north of the Rhône, Chave’s wines —crafted in a very traditional way— represent the “apex of the hierarchy” in terms of quality within the Hermitage designation. The winery owns plots in the seven “lieux-dits” of the famous granite hill of Hermitage, which allows them to produce wines of extraordinary complexity and finesse. Domaine Chave was founded in the 15th century and has seen an incredible succession of talented vintners over the centuries. Gérard Chave ran the estate until gradually passing the baton to his son, Jean-Louis Chave. Vinification to produce this great wine takes place in three large oak fudres, and the subsequent maturation is done in small French oak barrels, using between 20% and 30% new wood each year. Afterwards, the wines are assembled in tanks and bottled unfined. If necessary, they undergo a light clarification with egg white before bottling. This lot is composed of three bottles from the 2005, 2006 and 2007 vintages of their Hermitage. It is an extraordinary wine with incredible energy, with a dense body and a core of black plum, blackcurrant, and cherry on infusion. The finish is firm but exceptionally well defined, with remarkable length and precision thanks to perfectly integrated tannins. The three bottles are perfect to drink now or to keep aging. They have always been kept in an air-conditioned cellar (16°C) with the proper humidity (85%) for the best possible preservation.
