After bottling, 6 months of rest in bottle before sale Outside any scheme and parameter: the Legend of Montalcino The wines of the Soldera winery are the result of a guiding philosophy that allowed Gianfranco and Graziella, founders of this enological gem, to produce wines of the highest quality: firstly, such production requires a complex ecosystem, capable of forming the ideal habitat for a cultivation that is as natural as possible; secondly, past experience must be continually compared with the innovation that comes from research. Tradition and innovation, if adopted on a unique terroir that is as representative as possible of the area, are the main secret of the Soldera winery, which produces a culinary delight such as the Toscana Sangiovese “Case Basse”. Gianfranco thus began vinifying the grapes from the Case Basse estate, in a unique terroir with remarkable pedoclimatic characteristics, located southwest of the Montalcino area. Case Basse is vinified exclusively as Sangiovese in organic farming, without the use of herbicides and with entirely manual work. According to Gianfranco, all this is possible only by creating, thanks to modern innovations, a perfect ecosystem for the ripening of the grapes. For this reason, at Case Basse Gianfranco renovates the buildings, restoring the original architecture of the Tuscan farmhouses, trying to preserve the dry stone walls where birds and insects find refuge and breeding sites; to this end he places artificial nests to attract animals that become resident; he plants beehives; he saves the ancient abandoned olive trees and plants other fruit trees; he plans the arrangement of a botanical forest and builds a pond and an artificial lagoon. All this solely to create an ideal microclimate for the perfect growth of the vines. Each measure has been a step forward in improving his Sangiovese, a wine of classic style, with initial notes that are reserved and austere, but then opens with extreme depth, revealing a refined elegance. From the 2004 vintage, by a precise philosophical choice, Gianfranco no longer makes samples available to guides, but his Sangiovese speaks for itself, without the need for authoritative confirmations.
