The Winery This unit encompasses the estate's three buildings: the 16th-century Cabo de Armerías Tower, the 18th-century Mansion, converted into a living space, and the neoclassical church, built in the early 19th century and dedicated to Saint Martin of Tours. Four different elaborations in a single great wine, which includes the foot-pressing of the grapes, the fermentation of frozen berries in vertical tanks using the traditional punch-down technique, and 18 months of aging in French oak.
