An exceptional Meursault, signed Vincent Girardin This Meursault Village Vieilles Vignes 2021 comes from several prestigious parcels in the village of Meursault, including “Corbins,” “Les Forges,” “Sous la Velle,” “le Pré de Manche” and “les Vireuils.” These plots, situated on soils of old Calcareous robe (Callovian) limestone and argovian marly rock, give the wine a beautiful minerality and great aromatic complexity. Grape and élevage: the pure expression of Burgundy Chardonnay Made from Chardonnay from vines of about 50 years old, this wine benefits from Guyot pruning and careful green work (disbudding, tying, trimming). The élevage takes place in French oak barrels, with a portion of new oak, which provides elegant structure and subtle aromas of fine wood, without masking the fruit’s freshness. Style and aroma profile On the nose, this Meursault reveals floral notes (white flowers, hawthorn) combined with aromas of stone fruits (almond, hazelnut), of fresh butter, and citrus zest. On the palate, the attack is rich and velvety, supported by a fine freshness that balances the richness and gives a long, mineral finish. It is a wine that is ample and structured, typical of the Meursault style of “fat and taut.” Food pairings: elevate your Burgundian dishes This Meursault Vieilles Vignes pairs perfectly with shellfish (lobster, crawfish), white meats (poultry, pork), morel-stuffed sweetbreads, or a Bresse chicken in cream sauce.
