The Chablis Grand Cru “Hommage à Louis” 2023, signed by Jean-Paul & Benoît Droin, embodies the excellence of the Chablis vineyard. Originating from an exceptional plot within the Grand Cru Les Clos, this wine is produced from old Chardonnay vines planted on Kimmeridgian soils, rich in marine fossils and limestone. This unique terroir gives the wine remarkable minerality, a taut acidity, and great aromatic complexity. On opening, the nose delights with scents of white peach, lemon, oyster shell, and flint, enhanced by subtle toasted and smoky notes. On the palate, the wine unfolds with generosity, precision, and balance, combining vibrant freshness, restrained power, and a saline finish typical of great Chablis. The élevage, conducted with precision between stainless steel tanks and barrels, preserves the purity of the fruit while adding a fine structure. This grand cru pairs perfectly with seafood platters, oysters, scallops, noble fish such as sole or turbot, as well as poultry in sauce or aged cheeses like Chaource. Served between 11 and 13 °C, it can be enjoyed now but will gain richness and complexity with 10 to 15 years of aging. An exceptional wine for lovers of great white Burgundies.
