Caol Ila 2007/2019 - The Distillers Edition, 43%, 700ml, Cask number C-si; 6-479 Caol Ila single malts were available only through independent bottlers until the Caol Ila 12 Year Old was launched in 2002. The barley used is malted at Port Ellen, and the stills—which are much larger than those at other Islay distilleries—are filled only halfway to allow for greater contact between the alcohol vapor and the copper; this is why Caol Ila expressions are far less peaty than other Islay malts, possessing instead a subtle, smoky character. Occasionally, unpeated versions are also produced. The 2007 Distiller's Edition is 12 years old, double-matured in Moscatel casks, and bottled in 2019. The cask number is C-si: 6-479. Nose: Like ob12 years, with a little more fresh fruit Taste: The entrance is salty with a little sweetness, the salty smell of the sea, a little fresh fruit, apples, pears, some light peat, a little alcohol stimulation, and a weak sense of oil. Finish: Short rhyme, a little peat, a touch of sweetness
